Many polynomials associated to combinatorial objects have special functional properties, such as real-rootedness or log-concavity. These have strong implications for the discrete probability distributions associated to their coefficients. I will survey some interesting classes of multivariate real polynomials and their applications in combinatorics, probability, and operator theory.
